This is Leela's Vegan and Vegetarian Recipes and Cooking Hints. My cooking style is improvisational. I don't measure much, but go on instinct. I take inspiration and improvise to make up recipes. I'll add various menus, recipes and cooking hints. As I refine items, I'll modify recipes. I'll also point out other delicious recipes I've tried.

Vegan Mango Agar-Agar (Jello)

Vegan Mago Agar-Agar (Jello)
Junnu Gadda Halwa (Telugu)

Ingredients:
1 part agar-agar - broken into small pieces - (HINT: find in Indian store)
3 part water
2 part mango pulp
1 part sugar

Steps:
  1. Melt in microwave - 1 agar-agar to 1 water ~ 1 minute. Do for an additional minute at a time until all melted
  2. Add mango pulp - heat in microwave until blended
  3. Add 2 water - heat until boiling and let cool down a bit
  4. Add sugar - heat until melted
  5. Put in mold and let set - usually takes about 8 hours

ALTERNATIVE:

This is my mom's recipe. The original version is with milk. My mom suggested it can be made with rice milk but the proportions are not real clear to me right now so I'll have to ask her.
